Day 30

Today is our weigh in and our 30 day pics. Ive done ALOT of work to get here, and finally this lifestyle is a habit and I crave healthy food and workouts. I had my cheat meal on saturday. I went to red lobster, it was soooo worth the wait but I worked my butt off on sunday to work it off. After all my struggles and hard work I have lost 6 pounds!! and 6 inches :D Im soooo excited to finally see results. 6 Pounds in 1 month doesnt seem like much to some but thats more than a pound a week. Im so excited to get back on shakeology and get this next month going :)

Start of Week 4

Today I was able to do the full 46 min workout without stopping!! :) and we went on a walk tonight. So proud of myself. Tonight for dinner I made Clean eating homemade chicken noddle soup. It was amzing and we have about a weeks of leftovers. The great thing is my daughter can eat it too, so she will have meals preped for awhile. Feeling great but still fell like I havent lost very much :/ Here is the chicken noddle soup recipe.

Chicken Noodle Soup

TIPS:

·         You can use fresh thyme sprigs instead of poultry seasoning, I prefer the different herbs in poultry seasoning

·         Always salt and pepper each layer – the base, the stock and finished product. But go light on salt since you can’t take it away.

·         Add as many veggies as you like. If you like a lot of carrots, then add more – it will only help the flavor!

·         Short on time? Buy a rotisserie chicken and shred it up.

·         Remember to season your raw chicken breast while you cook. I chopped the breast up into small cubes prior to cooking, adding salt, pepper, dried parsley, onion powder and garlic powder. You want the chicken to have it’s own similar flavor to the stock.

Ingredients

  • 2 quarts chicken broth
  • 4 chicken breast, cooked and chopped
  • 1 medium yellow onion, chopped
  • 4 large carrots, chopped
  • 4 celery stalks, chopped
  • 3 cups cooked pasta of your choice
  • 1 clove garlic, finely minced
  • salt and pepper
  • poultry seasoning, about 3 tablespoons
  • extra virgin olive oil, about 3 tablespoons

In a large pot, lightly coat the bottom with EVOO, add celery, onion and carrots. Stir until softened but not brown (about 5 minutes). Add a teaspoon of salt and pepper and teaspoon of poultry seasoning (more or less to your liking).
Add the chicken broth – I used organic, free range chicken broth. Add a little more salt and pepper and your poultry seasoning, about 2-3 tablespoons. Bring to a boil.
Add your precooked noodles and let simmer for 5 minutes. Make sure your noodles are hard-al dente as they will absorb liquid in the soup.
Add the cooked chicken and continue to simmer. Taste the broth and add more seasoning or salt/pepper to your liking.
You can garnish with fresh parsley leaves if desired. Serve in a bowl with a nice, crusty bread. Enjoy!

Serves 6
I added a little bit of chile powder also to give it a kick. Also I cooked the chicken, celery and onions then added everything to the crockpot and let it cook all day, It was nice not having to worry about dinner.

Day 22

Next week is our weigh in. I have lost 1 pound but im pretty sure ive lost a few inches. We shall see. Ive been staying on top of my workouts but with our busy schedule this week, I had to take 2 days off (not eating though) So Im not letting myself have a break day for the rest of the week. Yesterday I power walked 4 miles on top of doing my usual 2 workouts so my legs are quite sore. Just going to to the stretch and ab part today. We are having Teriyaki grilled chicken with baked asparigus tonight for dinner. Here is a clean teriyaki merinade for either chicken or fish.
Teriyaki Marinade
Ingredients:

·         1/4 cup low sodium soy sauce
·         1 1/2 tsp maple syrup
·         2 tsp finely chopped garlic
·         2 tsp lemon juice
·         1/2 tsp sesame oil
·         1/4 tsp sea salt
Combine all ingredients and place meat or fish in shallow baking dish and marinate for 20 minutes in refrigerator. I turned the meat a few times to distribute the marinade evenly.

We use smoker chips after its cooked and it gives it a amazing smoked salmon taste. We also eat of a brown rice and I usually have a small salad on the side. Just watch your portion sizes. I started my greenberry shakeology yeaterday and skipped it today because hubby wanted to eat breakfast together. I need to find a good recipe for it. We each tried 1 yesterday and I really didnt like either that much, hopefully I can find one I like I dont know if I can do greenberry for a month again after this. Id like to try the trop. strawberry next though.

Week 2

So sorry everyone that I have not posted in the past week. Hubby came home from deployment so we are all adjusting and have been very busy. I plan to get on top of this, and post a lot more often. I have been working out and clean eating for 2 weeks now. The challenege group is starting its 2nd week though. I have not lost any weight yet but my pants are starting to get loose so I know I am making progress. My weakness is putting off my workout till after dinner, but after dinner im full and tired. I need to start getting up with matt when he leave for PT so I can get my workout in before Mikayla wakes up. That is my goal this week, to wake up by 6am. My challenge is to show matt that clean eating isnt weight loss eating, its a way of life and not a diet. You dont have to eat processed foods and junk food to be a man. He eats with me but I can tell its because im cooking and he doesnt want to cook for himself so there arent many other options. I feel bad for him, but Im sticking to my guns. We lived his lifestyle for the first 2 years of our marriage and I put on 40 pounds. Obvessly that is not going to work for me. This change in lifestyle has started a few arguements with us. He does not like change. But I need this, or I will die of being fat literally. When I have a minute this week I will post a few recipes that I have tried out, and I have found my staple for my eating. Clean eating taco salad. I cant get sick of it, and it taste almost sinful lol. I love it. This week in our challenge group we have to quit thinking negativly about ourselves and think of 3 words to switch out that we say to ourselves. Im going to have to think on this tonight. I will post them when im finished. Our coach said something that really spoke to me. Would wouldnt say the negitive things you say to yourself to your spouse, child, mother or father right? And Im an honest person so I may say the things I say to myself to some people but I cant imagine telling mikayla she is fat, lazy, unmotivated, or that she cant do something. So I need to start speaking to myself in a positive way. Keep checking in, Ill be posting when I have a few minutes here and there this week.

Day 4

Well today is day 1 of clean eating. I have finished my cleanse (yeaterday) and I lost 3 pounds!! :) very excited to keep this going. Tonight for dinner I will be having chicken fajita burritos. Who would have thought that this was clean eating! I went grocery shopping today to finish up getting what I needed for the rest of the week. What I love about these recipes is they are made for a family of 4 so it will last me a few days and I can eat on the go. I feel great today, even though I had to cut my cleanse short last night and start by eating some chicken and veggies because i ran out of salad and nothing was open yesterday. I need to squeeze in my workout tonight after kayla goes to bed. Below is the recipe for the fajita burritos.

Chicken Fajita Burrito
Ingredients

18 ounces chicken, cut into small chunks

1/4 packet fajita seasoning mix

1/2 red bell pepper

2 cloves garlic

Mushrooms

Several slices of white onion (you decide how much)

2 whole-wheat tortillas

Guacamole: 1 avocado, 1/2 medium tomato chopped, chopped red onion, a few shakes of sea salt.

Salsa
Preparation
Sprinkle chicken with salt and some fajita mix and cook in skillet. In a separate skillet, saute garlic, bell peppers, onion and mushrooms (use a small amount of olive oil if necessary). Meanwhile, prepare guacamole (mix all ingredients above). When vegetables are fully cooked, mix a small amount of fajita mix with 1/4 cup water and pour over vegetables. Increase heat and boil off the water. Heat tortillas on a clean skillet over medium-high heat for 15 seconds per side. Add ingredients on top of the tortilla and attempt to form a burrito and enjoy!
